Description More and more people are discovering the benefits of a gluten free diet. This course will build upon and expand students' understanding of fundamental baking techniques and introduce the principles of gluten free baking applications. Students will create a variety of gluten free baked goods and desserts which compliment a healthy lifestyle while learning to work in a safe and hygienic manner. During this six week course, students will learn how to formulate gluten free flour mixes, explore suitable ingredient substitutions, and create gluten free alternatives to popular baked goods and desserts. At the end of the course, students will be able to successfully create tasty, healthy alternative gluten free desserts such as muffins, quick breads, cookies, fruit flans and sweet pies.
Notes BAKE 100 is a pre-requisite for this course and must be completed before beginning this course.

A Centennial College Chef uniform is required for this course.
